This is a good book for ideas and twists on standard bakery items. I don't normally review a recipe book until I have tested a dozen recipes BUT in the case of this book it is very apparent that the recipes were not "sized" or tested.The obvious illustration of this problem is the sponge base for the Tonka Bean, Chocolate and Rasberry dessert, the one for the Matcha, White Chocolate and Cherry Trench and the Opera Cake. All of these recipes stipulate 5 eggs, 185 grams sugar etc. But they are being used for substantially different sized cakes in the finished product. The Opera Cake specifies that this is for two baking pans, whereas the other two imply a single pan which leads to a very thick sponge for an entremet. Laughably the Tonka Bean recipe states it makes four pillows, but the recipe calls for 1 litre of cream and 1 kilogram of chocolate. I used a third of that amount and had mouse for 8 pillow molds plus enough left over for three extra desserts. The same occurs for the Matcha and Cherry mousse; the recipe has 1.3 litres of cream plus 700 grams of chocolate to fill a mold which is 1 litre (minus the size of the cherry!)It raises the question as to whether the recipes were tested after they were written down or whether the professional recipes were reproduced with no thought about the quantity.There are also other places where the recipes require experience/ knowledge to adjust the description in the book.The flavour combinations and ideas are worth five stars, but the adjustments and changes that are necessary to make the recipes efficient mean the loss of a star.

I like the exciting and professional looking pictures and recipes. The author is definitely a very skilled pastry chef. After trying a few recipes, I begin to doubt the accuracy of the given measurements and instructions. I'm a confident home baker, but not a chef, so I may be lacking in some respect. After adjusting the measurements according to a few YouTube videos, the result significantly improved. I hope the author can go through it again to see if everything is correct and really help people who bought the book to recreate these puddings. It is the least he can do to respect the effort people make into making them.

This is truly a beautiful book with great recipes for the pastry artist. Note however that most of the recipes require some previous training in baking and pastry production, i.e. more for the professional rather than the novice. However a few of the recipes could be made by weekend bakers. Regardless, this is a wonderful book, with beautiful photographs, well written, and a must for fans of Japanese sweets and the fusion of western baking with Japanese ingredients.

Love this book straight forward. Simple layout. Great recipes. It is exactly what I wanted and would recommend it to anyone.

Just a collection of vague things the traveler could do in Vietnam - much better content is out there in books or online. No images or maps or anything useful in this book. And the things that are selected as things to do can be quite odd. The very first thing in the book is about going somewhere to get clothes made for you. Why would that be the first thing? Is that the best thing that Vietnam has to offer? It's a strange choice for pick of the bunch and seems very disrespectful to the Vietnamese people to me.

When I purchased this book I had a lot of questions regarding Vietnam Travel Guide. This book solved my issues very effectively. Filled with informative stuff. Most of the information can be helpful for any Kindle user, but some features are specific to book. This book had a great amount of detail regarding the history and gave excellent recommendations on what to see and do.

The Round House is a good read. It is hard to say I enjoyed the book because of the subject matter. But the subject matter needs to be told and talked about. I needed to keep reading this story because the young boy, Joe, age 13, who told the story. The author did a great job of letting us into the feelings of Joe after the tragedy that befalls their family. His close knit extended family, friends and community are vital to his coping with this tragedy. I also have a better picture of what the Native American has had to endure since the white man took over their land and pushed them onto reservations. I would highly recommend reading this book.

I am a high school teacher and taught this book this past year.The Round House is a complex, tragic story that drew my high seniors in and spit them out changed forever. They loved all of the characters, sympatized with their struggles, recognized their own courage and confusion in Joe, and debated his choices vociferously in class. Several said it was their favorite book from all the books they had ever read. One girl asked the school librarian if she could keep the copy she had read for class because it was filled with all of her notes on sticky notes and she wanted to save all of her thoughts when she was reading the novel. I ordered this copy from Amazon for that student to turn in to the school library instead. How is that for a testimonial to a book?

I initially gave “The Round House” 3 stars. It is a good read, with some excellent characterization and I read it at a decent pace and enjoyed it while doing so. However, when I was done with it, I was like “well, that was good, what’s next?” I was hoping for it to induce more than that in me. After discussing it with my book club, I moved up my opinion of it. I am content to give it 4 stars in the end.The good thing about this novel is that the suspense builds nicely, the story is an interesting one, and Erdrich is a smart enough writer not to harangue the reader with “issues”. She could easily have made this a novel about legal jurisdiction on Indian reservations, the effects of colonization on Native Americans hundreds of years after the fact, the impact of Catholicism on native populations, etc. However, to do so would have been to write a boring and pedantic novel. Instead, she has written a really interesting story that touches on (without whining or preaching) those topics in the context of a much more interesting human story that I doubt would isolate any reader. Kudos to her for that.One of the joys of this text is the unexpected humor (it is quite funny at times) and the author’s wonderful grasp of teenage boys. The characterization of the protagonist, 13-year-old Joe, and his three friends is well done. The book is set in 1988. I was a teenage boy in the 80s once, I recognized myself in many of the elements and characteristics she imbues the characters with in this text. The book is filled with real people, and there were times I was unexpectedly moved by some subtle element Erdrich created within a character. This happens in real life, and when novels capture that it pleases me to no end.I have some small quibbles with the conclusion of the novel, but overall it is an enjoyable read. Don’t read the critical blurbs printed in the book They overpraise “The Round House” to a ridiculous degree. It is a very good novel, it tells a poignant tale and will give you something to reflect on. Take it at that and enjoy.

Author Louise Erdrich, a member of the Chippewa (Ojibwa) nation, here writes one of her most powerful and emotionally involving novels. Though it starts as a crime story on the reservation, it quickly becomes an intense search for justice on all levels. It is also an examination of the lives of her characters, both old and young, as they face the challenges of reservation life. Their lives, as she shows in this novel, are seriously restricted by 1988, when this novel's action takes place, and any Native American who wants to honor the "old ways" on the reservation must now survive on infertile lands which cannot support him. Their culture has been seriously compromised by the arrival of Catholic missionaries who have weaned them away from their myths and traditions. Significantly, legal jurisdiction over crimes involving Native Americans now involves tribal officials, state police, and even the FBI.In a powerful opening scene, filled with symbols and portents, thirteen-year-old Antone Basil Coutts (Joe), only child and namesake of Judge Coutts and his wife Geraldine, is helping his father to pull tiny seedlings from cracks in the foundation of their house, awaiting Geraldine's return from her office. When she finally arrives at home, she is almost unrecognizable, so badly beaten she can hardly see, reeking of gasoline and so traumatized by rape and other crimes that she has become mute. Young Joe knows that it will be up to him and his father to identify who has done this. They begin to study his father's old cases searching clues.Joe is still a child, however, and though his empathetic father wants to protect him as much as possible, Joe becomes obsessed with getting his mother "back," determined to find and punish the rapist on his own. These tensions add drama and meaning to the novel, and Joe's contacts with others, both in his family and outside it, expand the scope. The sweat lodge ceremony is described, the extortion of elderly Indians by a white-owned supermarket on Indian land is detailed, the raucous and sexy (and hilarious) talk of elderly family members is recorded, the "flirting" of a stripper living with Joe's uncle is tension-filled and emotional, the appearance of ghosts to Joe, and the efforts of a local priest, a former soldier injured in Lebanon in 1983, are all described to powerful effect, keeping the interest and involvement of the reader at high pitch.As in her other novels, Erdrich provides a sense of continuity by including characters from other books in this one - including the priestly Nanapush (from Tracks), who was an inspiration to Mooshum, thought now to be one hundred six years old in this novel. Mooshum, whose story is told here, was also a main character in The Plague of Doves, a book which also includes Judge Antone Basil Coutts, father of this novel's main character Joe, and Corwin Peace, father of Joe's friend Zach. By repeating these characters through successive generations, Erdrich provides a genealogy and sense of history which add to the sense of time and place, and highlight the changes, not all of them good, taking place within the community. The novel, one of Erdrich's best, will keep serious readers totally engaged with its sensitive descriptions and insights, even as those interested in just a "good story" will celebrate the action, excitement, and the issues it raises.

I thoroughly enjoyed this novel. It was so well written and the characters truly lived. I found the native American mythology woven into the book so interesting and beautiful and kept on thinking what a horrific tragedy it is what white colonialists have done to the proud Indian nations. It was also horrifying to discover that white criminal suspects cannot be charged with rape/murder on Indian reservations though I believe Obama recently changed this in law. I highly recommend this book - I will be seeking out other books by this author.

I bought this book for my son, since he loves to cook over an open fire with his dutch oven. This is not the book for that. Also, someone did not do a very good job of proof reading. The jalapeno break steps are under the cinnamon bun recipe. Very disappointed. I will have to find a different book by a different publisher to meet his wants.

I love my Dutch oven because it makes cooking inside or out so easy and delicious. Now they make dutch ovens so many ways but I still love my cast iron one.and the recipes found in this cookbook come out so delicious. I love the Smokey barbecue beans. Thank you and enjoy your day.

Either the recipes are OVER the top (complicated) or so simple, they didn't sound good. Wish I hadn't purchased this book.

This is not the book I thought it was for the style of Dutch oven cooking I do....not Amazon's fault....either way there are plenty of great recipes to try and enjoy. Still a great informative book on Dutch oven cooking.

These recipes are for the stove-top and not camping.

Recipes are not written for campfire dutch oven recipes. Only one dessert recipe. Would not recommend. For others to purchase.

About the Author

DIANA SOUTHWOOD KENNEDY went to Mexico in 1957 to marry Paul P. Kennedy, the foreign correspondent for the New York Times. In 1969, at the suggestion of Craig Claiborne, she began teaching Mexican cooking classes and in 1972 published her first cookbook. She has been decorated with the Order of the Aztec Eagle, the highest honor bestowed on foreigners by the Mexican government. She lives much of the year in her ecological adobe house in Michoacan, Mexico, which also serves as a research center for Mexican cuisine.

I’m attempting to cook my way through this a la Julia and Julie. The Masa Fantasies chapter is worth the price of the book. I’ve made all but the recipes calling for jellied pigs feet and calves brains(I’m sure they are great; but some biases are difficult to overcome.). My favorite is the Panuchos.Next up: the tortillas chapter.

Ms. Kennedy writes the recipes in her book clearly, and I have found them generally easy to follow. She does a good job of highlighting regional flavors in the book, and provides a broad scope of ingredients and dishes. I jump back to this book quite often in search of ideas for meal planning. For the most part, I'm an experimental cook, and The Essential Cuisines of Mexico provides a good framework to play around in.

Better reserves for advanced cooks. Too complicated and complex for novices. No pictures or sketches to show what the end recipe should look like, and some ingredient lists are vague, ie "chicken" ?? How much?

I was looking for a gift for a friend that loves cooking and likes Mexican food. This book caught my attention while reading from the "look inside" option.I am from Mexico City and I have lived in the US for 10+ years. Fortunately there are amazing cookers in my family so I can always call someone back home whenever I am unsure about a recipe, or whenever I crave for something I haven't had in a looong time and just saw in a movie. Sometimes my relatives that live near me will correct me without me having to ask them for help because they saw I was about to make the awful mistake of not boiling the tomatoes first or because I was about to use the wrong pepper... 'Even when I can translate for my friends the recipes they ask me for, sometimes I just don't know how to explain certain details to them. It is even harder when some of those friends have never been anywhere in Mexico, because they don't have any reference point to compare good from not-so-good to bad Mexican food.What I am trying to say is that I know as a fact that it is not easy to find reliable books written in English for explaining Mexican food. And while I was reading through the selected pages in the "preview" of this book, I got a big smile on my face, and -to tell you the truth- I also felt very nostalgic. The author describes with such a good recollection of details places where I've been and food I've ate that I just started craving for all those places and foods out of sudden.I bought the book and when it got to my house I devoured it within days. I started making bookmarks, and to highlight information I found helpful. I did not know for example that "Cazuelas ... are not suitable for an electric burner" (page 460). That explained to me why I had ruined mine 10 years ago.Well, I like the book so much that I decided to keep it... I bought another copy for my friend (she loves it too!).This book has given me the ability to transport to so many different places without having to leave my own kitchen at home! I am planning on buying few more copies as I can, and give them as a Christmas or birthday presents for some of my other friends that love cooking, and have a tooth for Mexican flavors. BTW, my husband (he is American) has been cooking some of the recipes in this book and he loves them! He has mentioned to me: this taste like that dish we ate when we were on so-and-so place in Oaxaca; these taste like the tacos we ate at the mercado near you mom's house!

This is a very good update to Diana Kennedys Essential Cusines. It contains some new recipes and follows her pattern of giving the place or name of whoever contributed the recipe. It is very complete, authentic and reliable. She really knows her subject. The only complaint I have is that sometimes she lists ingredients that are impossible to find. The other problem is the size of the recipe, as sometimes it seems it for a bunch of people. However these are not that important and I highly recommend this cookbook.

`The Essential Cuisines of Mexico' is Diana Kennedy's Mexican answer to Julia Child's `Mastering the Art of French Cooking'. It has a similar style and quality and, like Child's encounter with French cooking, it came about as a result of her marriage to a husband who was posted to Mexico by his newspaper, `The New York Times' as their Caribbean / Mexican correspondent. This, plus a little help from New York Times colleague and friend, Craig Claiborne lead Ms. Kennedy to start teaching Mexican cooking and prompting her to write a book on the subject.There are two big differences between this book and Ms. Child's `magnum opus'. The first is that this volume is an amalgam of three earlier books, while `...French Cooking' was a distillation from a manuscript at least twice the size of the final published volume. The second major difference is that while Ms. Child is documenting `cuisine bourgeois', Ms. Kennedy is looking at Mexico's `cuisine provincial'. This is highlighted by the fact that the geographical home of all recipes is cited, and the geographic specifics are given for all the major ingredients cited in the appendix.The three earlier books being combined here are `The Cuisines of Mexico', `The Tortilla Book', and `Mexican Regional Cooking'. The author also states that some new material has been added to the recipes from these three books. To my eye, the integration of the three volumes is seamless. The author and her editors have not simply pasted the three volumes together, they have merged all the material to create a single work easily superior to the original three.By the time this book was published, it should be evident to the English speaking world at large that Ms. Kennedy has some serious competition from Chicagoan, Rick Bayless in the world of Mexican culinary authorities. Just as Ms. Kennedy presents recipes very similar to fellow amateur Julia Child and fellow `culinary archeologist' Paula Wolfert, chef Bayless does a much more analytical approach to Mexican cuisine, deconstructing dishes into their component parts in `Rich Bayless' Mexican Kitchen' and giving us multiple versions of important dishes in `Mexico One Plate at a Time'.In spite of these differences, Ms. Kennedy and Mr. Bayless agree on virtually everything important when they address the same subjects. The most important point on which they agree is the central place of Oaxaca as, to coin a phrase, the Provence of Mexican cuisine. On which author to prefer, if you are a fan of Mexican dishes, buy both authors, bypassing the earlier books which were folded into the current volume and also bypassing Mr. Bayless' `Salsas That Cook' as there is some overlap with `Rick Bayless's (sic) Mexican Kitchen'. If you are a culinary professional, Mr. Bayless may be just a bit more useful. If you simply want lots of good recipes, go with Ms. Kennedy. Also, Ms. Kennedy probably has the edge when it comes to giving recipes for Mexican baking, as that is one of her special interests. And, if that is where your strongest interest lies, go for her latest book, `From My Mexican Kitchen'. On which writer is more `authentic' I am taking it on faith that both authors are incredibly faithful to the tastes and the spirit of the Mexican originals while being very considerate of their gringo audience's kitchen equipment and skills.The one thing about which one may be disappointed in this book, based on the title, is that there is very little discussion of general regional differences. There is not even a dusty little map of Mexico and its regions. This is surprising in that, for example Penelope Casas includes a map of Spanish regions in all her major cookbooks and Diane Kochilas includes one in her excellent book on Greek cuisines. And, both authors give us recipes by region. Ms. Kennedy's omission is doubly puzzling as chef Bayless' first book, `Authentic Mexican' opens with a very good map of Mexican regions. This, of course, is only important if you are really interested in regionality, as when you plan to travel to Mexico. If all you want is recipes, this consideration is of no importance.Following the model of her spiritual mentor, Julia Child, Ms. Kennedy's recipes are exceptionally well written. To those of us for whom this is important, note that all volumetric measurements are given in both English and metric units. And, Ms. Kennedy's admonition on careful measurement, regardless of the unit, is well taken. In spite of the fact that these are interpretations of very provincial recipes, Ms. Kennedy goes to great lengths to add warnings and suggestions regarding what can be prepared in advance, what should be served immediately, and what can be refrigerated or frozen safely, without loosing flavor or texture.This book is not compulsively chatty, if that is something which annoys you. Many recipes have short headnotes, but not all recipes do. The overall book is organized by type of recipe, which makes it ideal for quick reference. In that regard, it is much better than Mr. Bayless PBS tie-in volumes. I went directly to the egg recipe chapter and was greeted immediately with the familiar `Huevos Rancheros', only to discover that Ms. Kennedy does anticipate Mr. Bayless a bit (and copies her Julia Child model as well) by separating the Salsa Ranchera recipe from the egg recipe with citations in the Salsa recipe for the dishes in which it is used.I do not miss pictures in cookbooks, but if you do, go for Bayless' first book, `Authentic Mexican'. Otherwise, if you simply need Mexican recipes, pick this book first, especially as Ms. Kennedy is a better and more engaging writer than chef Bayless in his first book. My only real regret with this book is that there is no `analytical' listing of recipes by Mexican region. Otherwise, this is a real classic!

This book has a lot of great information and recipes, but I find a lot of recipes to be vague. I am a professional chef and sometimes even I'm not clear on exactly what she means or how much of something to use.
